Taking care of Celiac Disease doesn't preclude you from ahving another problem that may be unrelated to celiac disease. I would approach this on two fronts I think. First, get blood work to see if you are ahving any gluten antibodies that would indicate that you are getting some hidden gluten from somewhere and it is time to check all of your safe foods for changes in ingredients etc. The other things to check is cholesterol levels. I historically had low cholesterol and in the last year have seen it go up(maybe due to better digestion). So if your cholesterol is high, go on a low fat diet as much as possible and try a cholesterol lowering medicine just like a non celiac. There are some more tests in the reference I put in. Good luck and hope you find the culprit.
